Black Beans: If you donít have black beans, you can swap in Kidney, Cannellini or Garbanzo beans. Whichever bean you pick, just rinse them off well before adding them to the skillet.

Rotel Diced Tomatoes: Easily swap in canned tomatoes, just dice them up before adding them to the skillet. Of course, diced tomatoes would also be great. You can just add in some extra seasoning to give the tomatoes the same flavor profile as the rotel tomatoes.

Instant Brown Rice: Brown rice is a complex carbohydrate that is popular for some of itís health benefits, but instant white rice can also be substituted.
